The Miele Dialog Oven: Modern Cooking with M Chef Technology
Discover the most advanced way of cooking with the Miele Dialog Oven and M Chef technology at Mykitchens Magazine.
reading time: about 2 minutes
It is part of the extensive, revamped Miele Generation 7000 built-in appliance series: the Miele Dialog Oven. With it, a completely new method for cooking and baking is introduced, called M Chef technology. Unlike traditional ovens, where food is cooked from the outside in, this innovative method uses electromagnetic waves to cook the food throughout its volume, similar to microwaves. For example, you can even cook fish inside a block of ice. Don't believe it? Then read more here about THE innovation in the kitchen appliance market!
Here is the Miele Dialog Oven
But first, let's take a closer look at the Miele Dialog oven. Introduced in 2018, this oven offers several advantages over traditional baking and cooking devices. All the information and facts you need to know about the Dialog Oven are provided here in an overview list.

Advantages and Disadvantages of the Miele Dialog Oven
Advantages of the Miele Dialog Oven 👍
- Time Savings: The biggest advantage of the Dialog Oven is its ability to cook food up to 70% faster than a traditional oven. For example, a potato gratin takes about half the time, a marble cake is baked in about 40 minutes instead of 55 minutes, and pulled pork (tender roast pork) is ready in just 2 ½ hours instead of the typical 8 hours.
- Complex Dishes: Thanks to its unique cooking method and specialized settings (Gourmet Units & Intensity), the Dialog Oven allows for a lot of experimentation. You can try different cooking methods and techniques, even attempting complex dishes that may otherwise be difficult to prepare in a conventional oven.
Disadvantages of the Miele Dialog Oven 👎
- Requires Some Practice: A major disadvantage of the Dialog Oven is that some dishes may not turn out perfectly on the first try and require a bit of practice. It can be said that the Miele Dialog Oven is primarily suited for passionate home cooks who have the time, desire, and patience to experiment with new dishes and cooking techniques.
- High Purchase Price: Of course, the price is another factor to consider. At nearly €10,000, the Miele Dialog Oven is a luxury kitchen appliance that not everyone can (or wants to) afford.
How Miele M Chef Works
The M Chef technology in the oven uses electromagnetic waves that generate predefined frequencies (in the 915 megahertz range) and release them into the cooking chamber. The principle behind this is that food is made up of molecules arranged differently, which change during the cooking process. Miele M Chef targets this very point. The technology analyzes the food through sensors and determines which frequency is needed at any given time. Cooking becomes a dynamic process, constantly adapting based on the type of food being prepared.
Another important aspect is that the food is cooked in its entire volume. The heat is distributed evenly from the edges to the core. This allows, for example, a fish to be cooked inside a block of ice without the ice melting. Similarly, a piece of meat can be braised without browning. However, Miele M Chef works in combination with traditional oven modes, such as top and bottom heat or fan-forced convection.

Miele Gourmet Units
A new feature in the Miele Dialoggarer is the addition of two special settings: Gourmet Units and Intensity. Gourmet Units represent the amount of energy required for cooking. One Gourmet Unit is equivalent to one kilojoule. The Intensity setting indicates how quickly the food can absorb the energy. You can choose between three intensity levels: High, medium, and gentle. A quick tip: Most foods are cooked in the "high" intensity setting in the Dialoggarer.

Gourmet Assistent / Gourmet Profi
With the Miele Dialoggarer, you can choose between two modes: Gourmet Assistant and Gourmet Pro. The Miele Gourmet Assistant acts like a virtual cooking expert, suggesting the most important cooking settings. It automatically adjusts the temperature, operating mode, Gourmet Units, and intensity according to the food you are cooking and its weight. On the other hand, Gourmet Pro mode gives you complete control over the settings. You can independently select and adjust all parameters, allowing you to experiment and explore cooking with the Dialoggarer.
Dialoggarer vs. Oven & Microwave
What exactly makes the Miele Dialoggarer better than a traditional oven or microwave?

The Difference Between an Oven and a Dialoggarer
Traditional Cooking Methods vs. Electromagnetic Waves
In a traditional oven, food is cooked from the outside in. This results in the outer layers becoming browned or crispy, while the inside may still be raw. Commonly used heating methods in ovens include convection, top and bottom heat, and grilling. This method can cause uneven cooking, especially for thicker or delicate items, and often requires longer cooking times.
The Miele Dialoggarer, on the other hand, uses the MChef technology combined with electromagnetic waves. These waves penetrate the food and cook it evenly from the inside out, ensuring that the food is perfectly cooked in its entirety. With the Dialoggarer, the heat is distributed uniformly through the food's volume, meaning both the inside and the outside are "done" at the same time, without over-browning or drying out the outer layers.
In essence, the Dialoggarer offers a more precise and faster cooking experience. It doesn't rely on external heat sources that cook from the surface, but rather, it uses electromagnetic waves to target the food's internal structure, allowing it to cook evenly and retain moisture. This innovative approach results in higher quality cooking with better texture, flavor, and speed compared to traditional ovens.
The Difference Between a Microwave and a Dialoggarer
Weak Device vs. Powerful Device
Like the Dialoggarer, the microwave also cooks using electromagnetic waves. However, the microwave is a small kitchen appliance with less power. Its output is only sufficient for surface-level effects, such as defrosting and reheating. In comparison, the Miele Dialoggarer offers a broader spectrum of frequencies, making it a much more powerful and versatile cooking device.
